1. The Problem

The Restaurant industry is one of the demanding sectors to operate these days [1]. Rising staff costs, stock management issues, and shrinking margins are already great challenges, but initial research identified health and safety compliance as one of the most persistent and costly pain points.

1.1 The Financial and Operational Risk of Compliance

Failing to meet food compliance standards can lead to serious consequences:

  • Potential fines from £100 up to £3 Million for not meeting hygiene regulations [2][3]

  • 1 in 20 businesses fail hygiene inspections [4]

Failure to meet food compliance can directly impact revenue, reputation, and long-term viability of restaurants. Several news reports highlighted heavy fines and high numbers of venues that fail inspections each year.

1.2 Impact on Customer Trust

Poor hygiene ratings don’t just result in penalties, they also directly affect customer trust, thus profits:

  • 41% of customers consider hygiene rating when eating out. [5]

  • 55% of UK customers would not consider eating food from a venue with a hygiene rating lower than four stars [6]

  • 68% of businesses find that good hygiene rating attracts more customers. [7]

In a competitive market, even a small drop in rating can mean a significant loss in customer trust and repeat business. [8]

1.3 The Hidden Cost of Compliance

Beyond inspections and fines, compliance also consumes substantial time and operational resources:

  • Manual labour required to log compliance and carry out audits

  • Keeping track and up to date with messy paper logs

  • Significant staff time diverted from service to administration

  • Hours spent preparing for inspections

These hidden costs accumulate over time, reducing efficiency and profitability. [9]

2. The Solution

Complaud is a compliance automation software designed to reduce operational burden while improving food safety outcomes through predictive analysis. Each feature reflects direct feedback from restaurant owners and staff:

  1. Automated manual checks

Target Audience: Staff member responsible for compliance checks, typically the kitchen manager

Kitchen compliance revolves around daily opening, closing checks, as well as regular hourly checks. Complaud digitises these processes through structured workflows aligned with SFBB (Safer Food, Better Business) practices, ensuring that required tasks are completed accurately and on time.

Observational research identified the need for hands-free logging, leading to the integration of audio recording. This directly addresses feedback of missed logs in busy, hands-on moments.

Staff can navigate personalised checklists and complete logs quickly and efficiently within the platform.

  2. Predictive Intelligence

Target User: Staff member responsible for compliance checks, typically the kitchen manager

Most existing tools only surface issues after they occur. Complaud continuously analyses patterns across compliance data to identify emerging risks before they escalate.

    • Keeps track of decreasing/increasing trends in temperature readings

    • Highlights equipment that may require maintenance

    • Flags expiring certifications and recurring weak points

  3. Inspection Tracking

Target Audience: Restaurant Owner/Manager and Inspector

Inspections are typically unscheduled, and feedback is mostly delivered verbally. This makes it difficult for restaurants to demonstrate improvement on the day and track recurring weaknesses over time.

Complaud provides access to historical inspection records, enabling restaurants to can keep track of past performance and identify patterns. Based on previous inspection date trends, the platform also estimates likely upcoming inspection windows, helping restaurant prepare proactively and stay inspection ready.

  4. Report Generation

Target Audience: Restaurant Owner/Manager and Inspector

The platform provides the ability to generate audit-ready reports that reflect what inspectors look for and includes records of previous issues.

Staff can create structured reports aligned with different sections of the SFBB book, ensuring records are clear, organised, and readily available whenever inspectors request specific information or evidence.

  5. Overview & Compliance Score

    Target Audience: Restaurant Owner/Manager

The main dashboard provides a clear overview of each restaurant’s status, including urgent alerts, open issues, pending tasks, and an overall compliance score.

The compliance score is calculated as:

Compliance Score = (% of checks completed) + (% of logs that meet required thresholds)

This provides a simple way to track overall compliance performance in real time.

For operations managing multiple sites, the platform allows switching between locations, comparing of scores, and viewing each site’s status in one place, making it easier to monitor performance across all sites.

3. Business model

When exploring business models, we evaluated four different pricing strategies: one-off purchase, usage-based, freemium and subscription-based.

Rationale: We opted for a subscription-based model as this aligns with the recurring nature of compliance and would offer predictable revenues for us and costs for our customers.

Complaud will consist of three tiers to cater for different restaurant sizes: Starter, Main and Full. For the tiered service offerings, refer to the public side of the website. Tier justifications are explained in the table below:

Tier

Target Customers

Evidence Based Justification

Starter (£60 per site/month)

  • Ideal for single-site independent restaurants

  • Main growth lever for years 1 and 2

Intentionally priced at the point where the independent restaurants’ investment will see breakeven in a week given the 50% time savings from implementing Complaud.

Main (£80 per site/month)

  • Ideal for small chains with 2-5 locations

Main has a small price increment of £20 due to increased storage and usage capacity of the prediction feature required for this size, but is still intentionally priced below all competitors (see section 5) to ensure initial market penetration.

Full (£100 per site/month)

  • Ideal for chains that operate in multiple regions with more than 5 sites, catering, hotels

  • Main growth lever for year 3 and beyond

This tier offers the full capabilities that Complaud has to offer. This significantly undercuts the pricing of our competitors and offers the best of our unique selling point features, such as unlimited predictive intelligence.

*Note: All price points will be continuously re-evaluated from market signals once we start selling. When Complaud scales to hundreds of locations during year 3, the full tier pricing will be re-evaluated to ensure we are operating at a level that is still profitable and attractive to chains.

Beyond our main revenue lever, we will generate revenue through two other streams:

  • Set-up Services: High-touch onboarding where Complaud experts provide in-person visits to integrate the system directly into the client’s workflow, which was requested during interviews.

  • Professional Services: A commission-based model (5% fee) connecting clients with vetted partner retailers.

    • Example: If our predictive sensors detect a refrigeration fault, the client can book a specialist through Complaud. On a £100 repair, Complaud retains £5.

These are just some examples of how we will generate revenue to ensure long-term profitability. As we grow, we will explore future revenue streams and re-evaluate our business model to maintain growth within the market.

4. The Market

Within the Restaurant Management Software (RMS) market, we focus on the Compliance Software segment, which represents 30% or £4.5 Billion globally (TAM) [10, 11]. Narrowing down to our target location, we reach £73 million in United Kingdom (SAM) [12]. Based on our P&L calculations, we aim to capture 1.5% of the SAM by year 3 (SOM).

Key Takeaway: We are tackling a billion-pounds market with double-digit growth, and internal million-pounds revenue potential in 3 years.

5. Competitors Analysis

Most existing solutions remain rooted in conventional approaches, with higher prices:

  • Mapal prioritises breadth over depth, with its compliance arm lacking major UK regulations (pricing is not publicly listed, reviews say at least £1k/mo.)

  • Food Alert also prioritises breadth, focused on multi-site compnaies, with compulsory consultant service. (Prices start at £20,000 per year.) [13]

  • Trail only offers a digital versions of checklists, with no other advanced features (£82.5/mo.) [14]

Our competitive advantage (USP):

The clear gap lies in ease of logging, audit-ready reports, full regulatory focus, and the ability to anticipate risk. Our insights are proactive rather than reactive, identifying potential issues before they escalate.

In addition, the platform brings all restaurant sites into one place, making it easy to monitor performance across locations. Our compliance score enables direct comparison between sites, providing clear, standardised visibility, a feature not currently offered by competitors.

Moreover, we are also priced below our competitors to support initial market penetration.
